B IS FOR BOLIVIA

Bolivia fascinates me. It’s the country where people make the most incredible garments from colorful threads that everyone else would think clash. I haven’t been and can’t currently go due to being in the process of migration. So the next best thing is to go to the little underground food court beneath Columbus circle and get a chola from the Bolivian place. I get the veggie one with egg salad, loaded with a splash of various pickles, which make me feel like I have food synesthesia or something. My partner gets the brisket one, which he claims is equally delectable. I also love the drinks there. I can’t even name them or the ingredients, but the last time I had something that was home-made peach cider with lemonade, and it was so goooooooood.
